The long-awaited list of winners of the Michelin guide in 2019, will be presented this Monday at 16: 30, salle Gaveau. If the secret is kept on the identity of the new star – most the discover on the spot, the red Guide, prevents upstream, by correction, the leaders are demoted. This is the case of Marc Veyrat, of The House of the Woods at Manigod, in Haute-Savoie.
The current since a few days already of the bad news, the chef in the hat has confirmed this morning (Monday) to the AFP loss of his third star, won a year ago. “I’m still terribly disappointed in the total incomprehension and injustice of this impeachment of the 3rd star in the Michelin guide. I remain combative and present in my kitchen with my team,” he informed in a press release. “I’m a cook a farmer, I (…) will continue regardless of what happens, every day, to radiate the House of the Woods”.

This decision is all the more surprising that the third star that had been awarded to The House of the Woods just last year. Why the Michelin is déjuge-t-it so quickly? This is a first.
The chief savoyard 68-year-old has also entrusted his stupor at the Dauphiné Libéré : “Yet it has never been so good, we have a great team, the feedback from my customers are excellent”. Referring to as the reason “The difficulties to access the restaurant may be”, Marc Veyrat is a regional daily newspaper as a “warrior”, willing to redécrocher the third star as early as next year. “Twice, my homes have burned, I’ve been hit by an accident at skiing,” he recalls.
Marc Veyrat had already got the three stars to two other restaurants located in the same region: the Auberge de l’eridan in Veyrier-du-Lac and The Farm of my father, in Megève, two institutions which he then sold. He opened The House of the Woods in 2013, before the rebuild after a fire in 2015.

Pascal Barbot and Marc Haeberlin fallen
Two other chefs, three-star hotel is advertised as the biggest losers in this 119th edition. Marc Haeberlin at The Auberge de l’ill (Illhaeusern), had managed to keep the supreme accolade picked up by his father in 1967. Only Paul Bocuse had done better. Bad news for Alsace, of which it was the single table triple-starred. The chief haut-rhinois responded to France Bleu : “It’s quite a coup, he was 51 years (…). The whole team is affected, a bit collapsed (…). We are going to move forward, we will reinvigorate everyone. The Hostel is a beautiful house, who is going to stay.” Gwendal Poullennec, the new director of the guide since September, he reportedly explained that”there had been this year a few small irregularities”.
But as Pascal Barbot, Astrance (Paris Xvi), triple-starred since 2007.
